Daily Log --

Someday I will not have to eat like a diabetic. Instead, I will need to choose to eat like a diabetic.  That is a 'wake-up' thought.  Being forced to eat healthier and choosing to eat healthier, well those are very different mind sets. My goal is to stick with it.  Life long habits, right? Please do share with me ways that you stay motivated to make good food choices.

For now, here is my food log.

This was a tasty breakfast. With Almond Milk, of course.

Sugar free soda.  It is a nice little treat on a hot day. (And yes, I still love grape.)

And a snack after measuring my sugar levels.  Gotta love a cheese stick.

Left over tortellini and salad for lunch.  mmmmnnn. 

My family now begs for smoothies throughout the day- and it is hot, so after a bit of yard work, I give them what they want. :)

Dinner was a bit dull.  Hotdog and steamed veggies. Afterward I also had a handful of chocolate chips.  It was that kind of day.

So at night, my sugars were really really low, at 61, so I opted for one of my favorite treats.  I melt chocolate chips and peanut butter together, and this time I added Nutella and I dipped my banana in it.  It is a naughty treat, but it is possible to make only a small amount.  It is a fast and yummy fondue.

Another Food Log

Are you so excited?  Can you believe anyone posts pictures of what they eat every day?  Can you think of anything more stimulating?  Okay, all sarcasm aside, this log does help me stay on track, so thank you for reading it.  I hope it is still helping you.  :)

Breakfast was interesting. I test my glucose levels fasting, and they were right in line so I grabbed 2 peanut butter balls and started my day.  Peanut butter balls are really filling.  I forgot to eat a regular breakfast and after getting the family to where everyone needed to be, went ahead and worked out.  No breakfast and a hard 45 min. workout.  Duh!
After my work out, I realized that I hadn't eaten.  I tested my sugars and I was at 74.  Yeah, I was low.  But for only 2 peanut butter balls, I wasn't too bad.  That peanut butter probably saved my bacon. lol.  I grabbed a Skor Bar.  I only had 1/3 of it and gave the rest away.  (Kids you know.)  Anyway, it was just the right amount.  But I have to be more careful.


For lunch I had left-over stir fry.  It's not as pretty as a left over. lol  Anyway, I didn't feel like making rice, so I put it over chow mien noodles.  Ideally I would have over brown rice, but this was okay too.

Snack time with my low sugar, coconut ice cream bar. 100 calories of yummy.

5 crackers before dinner to keep me going.

taco casserole. Yum.  Lots of lettuce on bottom.

My favorite little pick-me-up, frozen blueberries.  So good.

A couple handfuls of cereal, because it was easy, out and I wanted a snack.  Better than chips I guess.

Eating to Take Control

This week feels good.  Food-wise I am doing better. Exercise-wise I am doing better, and blood sugar-wise I am doing better.  It is amazing what a difference food makes in the body.  Eating well can help us feel good, energetic and healthy.  Eating poorly, can make us cranky and sluggish.  I believe in balance. I think you can have a cookie here and there as long as most of the time you are eating healthfully.  I'm getting closer to that balance.  And you? How is your journey?

Through out the day, when ever I wanted a snack, I just grabbed 2-3 peanut butter balls.  It's nice to have something quick that doesn't kill my sugar levels.
Breakfast was cereal and almond milk.  Nothing too exciting, but tasty.

I found this diet juice.  It is so good.  It has 5 calories and 2 grams of sugar. What a nice treat.


Chicken tacos for dinner. Mexican food is easily transformed into diabetic friendly fare, if you leave out extra fats and sauces.  I boiled my chicken breasts and then flavored them.  No sauces, just salsa and a little sour cream. I added avocados for some good healthy fat, and because I love them.  They add all the creaminess that I need, but since I eat them fresh, instead of in guacamole, they are a really healthy addition.



I was only at a 74 blood sugar level last night, so I made some french toast.  I used home made, whole wheat bread, (which I bought from my neighbor's daughter.  She is quite a little baker, and making this as a fund raiser to fund her trip to a national clogging competition. I love entrepreneurship!) Any way, it is a fabulous all whole wheat bread, and she grinds the wheat fresh, so it is really yummy and nutritious.  I used boysenberry syrup.

It's Easier With Support

My husband, who we can all agree is the sweetest man on earth, made me dinner last night.  He also did the grocery shopping.  He bought all sorts of diabetic friendly food.  Then he ate the same thing as me.  Now that is sweet.  He also bought me things to make smoothies that are diabetic friendly, since I was lamenting my loss of summer ice cream cones.  And he brought me Soy Milk and Almond Milk to try.  I had to ask him why on that one. He has a friend who lives a vegan lifestyle, since he was pre-diabetic, and is controlling his sugars quite successfully.  So my DH bought me the type of milk that this man drinks. Seriously- sweetest man EVER!

Honey-Comb is not the best choice for a diabetic or someone watching their weight.  However I had a serious craving.  I did what I used to make my kids do with their sugary cereals; I had 1/2 portion of Honey-Comb and 1/2 portion of Cheerios.  I got the taste, but 1/2 the sugar. And I should point out, that Honey-Comb is actually not too bad on the sugar scale.

Mid morning snack was an egg.

I made this for the night's dessert.  It was hard to wait.

Whole grain crackers with peanut butter was actually lunch.  Once again, I forgot to eat, and then noticed that I was sleepy and moving slow. Peanut Butter to the rescue!!

This is the AMAZING dinner that my husband made for me.  Asian lettuce wraps and a few chips. I had 4 of these wraps.  I probably wouldn't normally, but of course I forgot to eat lunch, so I was starving.

2- yup 2 chocolate chip cookies.  Funny thing- they didn't taste as good as they used to.  I tried to eat them slowly and really enjoy them.  I just didn't get the joy out of them that I used to.  Yeah!!!!!  If my tastes are changing, this will become easier. Since I need this to be a lifestyle, I am relieved to see this happening.

My late night snack.  Yes, it was delicious. Sugar-free can be satisfying.

I decided to get brave and try the almond milk. It tastes like milk. I like it.

So the almond milk made me brave- so I decided to try the chocolate soy milk.  It's actually pretty good.  I'm starting to feel like I can do this.  Now, this still has sugar, because it is chocolate, so I can't go crazy, but a little bit now and then is reasonable.
