Another Food Log

Are you so excited?  Can you believe anyone posts pictures of what they eat every day?  Can you think of anything more stimulating?  Okay, all sarcasm aside, this log does help me stay on track, so thank you for reading it.  I hope it is still helping you.  :)

Breakfast was interesting. I test my glucose levels fasting, and they were right in line so I grabbed 2 peanut butter balls and started my day.  Peanut butter balls are really filling.  I forgot to eat a regular breakfast and after getting the family to where everyone needed to be, went ahead and worked out.  No breakfast and a hard 45 min. workout.  Duh!
After my work out, I realized that I hadn't eaten.  I tested my sugars and I was at 74.  Yeah, I was low.  But for only 2 peanut butter balls, I wasn't too bad.  That peanut butter probably saved my bacon. lol.  I grabbed a Skor Bar.  I only had 1/3 of it and gave the rest away.  (Kids you know.)  Anyway, it was just the right amount.  But I have to be more careful.


For lunch I had left-over stir fry.  It's not as pretty as a left over. lol  Anyway, I didn't feel like making rice, so I put it over chow mien noodles.  Ideally I would have over brown rice, but this was okay too.

My favorite little pick-me-up, frozen blueberries.  So good.

A couple handfuls of cereal, because it was easy, out and I wanted a snack.  Better than chips I guess.

Back to the Log

So you have probably noticed that I don't log my weekend meals.  I'm just too busy.  Also, I am not a vigilant on the weekends.  I have noticed that the new way of eating is becoming part of me though.  I tend to automatically add fruit and whipped topping to my pancakes instead of syrup. My husband made me a fabulous stir-fry for Mother's Day dinner.  It was great.  It was loaded with veggies and a New York Strip steak.  Since my iron is also low, this turned out to be a great meal for me.  I am automatically reducing my portion sizes. This is becoming a way of life, and that is good.

One big surprise to me is the almond milk.  Ummm. . . I like it better than milk.  I never thought I would say that.  It was nice because I thought I was going to have to "make do" and give up something I liked.  Turns out I like the alternative as well or more.  How often does that happen?  Maybe my tastes are changing.  I don't really care about the reason.  I'm just happy that it's the case. :)

Okay, yesterday's meal log; because you have been waiting on pins and needles, right?

This is a protein shake. I used a product called Attain from Melaluca.  If you have never heard of it, I will do a post about it later today. Done, use protein shake link. Suffice it to say, it was delicious, and kept me full for hours.  It also kept my blood sugars under control.  I am not trying to lose weight, so I made it into a shake with a banana and some Chocolate soy milk.  I'll post the recipe later.

Lunch was whole wheat bread with a small Spanish omelet on top, cottage cheese with mandarin oranges and left-over cole slaw from the other night.

My sugars were really really low in the afternoon yesterday. As in, 72.  That is low.  So I had a mango.  In the past I would have said, fabulous! Now I can have chocolate!  But I wanted the mango. I think it was a lot more satisfying too.

This is what my husband had for dinner.  Ribs, potatoes, and biscuit.  I know there is no green.  He is a grown man, I do not tell him how to eat. lol
This is my dinner.  I had left-over BBQ chicken with 2 Tbl BBQ sauce, over - you guessed it- cabbage.  I also had some potatoes I will post the recipe soon.  Done. These are AWESOME and there isn't a spot of butter on them, just olive oil. mmmnnnn.  I did add a little sour cream.  About 1 Tbl. Diabetics can have funny things.  Sour Cream is okay, in moderation, and even helpful to items like potatoes, because the fat slows the sugar absorption.  Weird, huh?


Okay, I only had one.  I shouldn't have had any.  But I did.  My sugar levels 2 hours later were a tiny bit high at 125, but that is high on the acceptable end, so it was fine. Still, I shouldn't have had one.

I do want chocolate milk. But I know it's not always the best choice.  This is 1/2 Soy chocolate milk, and 1/2 almond milk.  Delicious.  I admit, I had another glass of soy chocolate milk, straight- but only 1/2 glass. :) Sugar levels were at 95 this morning - fasting.  So a tiny bit high, but still in the acceptable range.  Tonight, only the 1/2 and 1/2 mixture.

It's Easier With Support

My husband, who we can all agree is the sweetest man on earth, made me dinner last night.  He also did the grocery shopping.  He bought all sorts of diabetic friendly food.  Then he ate the same thing as me.  Now that is sweet.  He also bought me things to make smoothies that are diabetic friendly, since I was lamenting my loss of summer ice cream cones.  And he brought me Soy Milk and Almond Milk to try.  I had to ask him why on that one. He has a friend who lives a vegan lifestyle, since he was pre-diabetic, and is controlling his sugars quite successfully.  So my DH bought me the type of milk that this man drinks. Seriously- sweetest man EVER!

Honey-Comb is not the best choice for a diabetic or someone watching their weight.  However I had a serious craving.  I did what I used to make my kids do with their sugary cereals; I had 1/2 portion of Honey-Comb and 1/2 portion of Cheerios.  I got the taste, but 1/2 the sugar. And I should point out, that Honey-Comb is actually not too bad on the sugar scale.

Mid morning snack was an egg.

I made this for the night's dessert.  It was hard to wait.

Whole grain crackers with peanut butter was actually lunch.  Once again, I forgot to eat, and then noticed that I was sleepy and moving slow. Peanut Butter to the rescue!!

This is the AMAZING dinner that my husband made for me.  Asian lettuce wraps and a few chips. I had 4 of these wraps.  I probably wouldn't normally, but of course I forgot to eat lunch, so I was starving.

2- yup 2 chocolate chip cookies.  Funny thing- they didn't taste as good as they used to.  I tried to eat them slowly and really enjoy them.  I just didn't get the joy out of them that I used to.  Yeah!!!!!  If my tastes are changing, this will become easier. Since I need this to be a lifestyle, I am relieved to see this happening.

My late night snack.  Yes, it was delicious. Sugar-free can be satisfying.

I decided to get brave and try the almond milk. It tastes like milk. I like it.

So the almond milk made me brave- so I decided to try the chocolate soy milk.  It's actually pretty good.  I'm starting to feel like I can do this.  Now, this still has sugar, because it is chocolate, so I can't go crazy, but a little bit now and then is reasonable.
