Taco Salad Too

I know that I have already posted my favorite Taco Salad recipe, but I thought I would add another that I also enjoy.  

Taco Salad
1lb. ground beef (Or Turkey or chicken- whatever makes you happy)
1/2 fajita seasoning packet
1/2 ranch seasoning packet
2 Tbl. Ketchup (I know, back with the ketchup, but this is a kid friendly recipe)

Cook your meat till it's all nice and brown. Drain. Add 2/3 cup water and the seasoning packets and ketchup. Cook until the liquid has reduced. Set aside.

Shred a head of Romain Lettuce and place in bowl. Add any of the following:

Tomato
Black Beans/kidney beans
green onions
1 c. cheddar cheese
1/2 c. pepper jack cheese
1 can corn, cooked and cooled
1 avocado

I also added some "Mexican" rice. Meaning, I had cooked rice in the fridge, so I added some salsa to it and heated it up and added it. Honestly delicious.

I also had pity on my family. I took 1 bag (the size you put in sack lunches) of Doritos. I crushed them and added to the salad. I mean the small bag- the really small bag. This is supposed to be healthy but easing a family into it is easier than all that change at once. ;)

Mix it all up and serve. Makes a delicious salad, and not delicious leftovers, so if you want left overs, keep everything separate and allow people to load their plates buffet style. :)

Another Typical Day

Yesterday I started out with high blood sugar and not feeling great, so I decided to run before breakfasting.  I don't really recommend this, but it worked for me yesterday. And let us not forget, breakfast is not my favorite meal of the day. lol

Around 11:00 I decided I was hungry and had some toast with thin slices of cheese. Grain and protein.

by 12:30, I was hungry. I had a bowl of strawberries. Yum!

This is my new favorite drink.  Water with a few slices of lemon. I never get lemon at restaurants because if they don't wash the outside of the lemon, they pass on all sorts of nasty stuff.  However, at home, I wash the lemons and then slice.

A favorite meal in our family- taco salad. I'm pretty sure my kids only eat it for the chips. Diabetics and anyone watching their weight should count out 5-7 chips. I have to admit, I had as many as I wanted last night and 2 plates this size of taco salad.  But I only had a smattering of dressing on the first helping and none on the 2nd. Taco salad is flavorful enough to not need dressing, or at the very least to only have some salsa. I did not use sour cream.

I shouldn't have made it- darn Pinterest! I did only have a piece- not 4, so that was good.  I also had some of my husband's steak.

Taco Salad

I'm going to do this with pictures. After all, its taco salad- pretty self explanatory.  It takes about 20 min. to throw this salad together.

You need olives, kidney beans, green onions, tomato, avocado, and any other yummy topping you would like.

You need some lettuce or your favorite bagged salad



a little cheese and your favorite seasoned meat, (hamburger, turkey, chicken all work well.)


My mother in law used French dressing in her taco salad, and it is surprisingly good.  I hardly ever do, opting instead for calorie neutral salsa, but I decided to treat the family tonight. I have used different flavors of Doritos, but the orig. is always good. (Late night taco is yummy too.)

Seriously yummy food, and everyone eats their lettuce. (because in our house, no chips without lettuce.)
